Every year on November 1st, World Vegan Day is celebrated to bring awareness about the benefits of a vegan lifestyle for both humans and animals worldwide. I’m personally not vegan, but I try to incorporate as many plant-based and whole foods as possible into my diet. Here are some of my favorite vegan recipes!

Buffalo Cauliflower Wings

I’m not a huge fan of the texture of cauliflower, but preparing it this way with a lightweight breading gives it an amazing crispy texture. The buffalo sauce gives it a kick that makes this overall a super delicious meal. The air fryer is my personal favorite way to make these because it’s quicker and less messy than using an oven or even a fryer!

Chia Seed Pudding

Chia pudding is one of the easiest overnight breakfasts. All you need is 3 ingredients for the basic chia pudding; chia seeds, milk of your choice, and a sweetener of your choice. I use honey for my sweetener and an unsweetened almond milk.

One of my favorite things about this recipe is that it requires little preparation. You can simply mix everything together and keep it in the fridge overnight for an amazing breakfast or snack in the morning.

There are endless possibilities for flavor combinations for these too. You can add chocolate and peanut butter for a Reese’s inspired pudding, or you can add jam and yogurt to make a parfait.

Chickpea Caesar Salad Wrap

This wrap went viral on TikTok and for good reason! There are so many ways you can tailor this to your individual preferences, which is another thing I love about this.

I like to make my chickpeas in the air fryer so they’re a little crispier and I love to add avocado for some good fats. This is a super balanced and quick meal that’s great on the go!

Cashew Alfredo Pasta

Cashews are a super creamy, delicious alternative to a normal alfredo. You can make a vegan alfredo sauce in less than 20 minutes. I love putting spinach or kale in this recipe to add some extra veggies. This is one of my favorite meals for fall and winter because it’s so hearty and healthy!
